I can see some similarities, but, the 'known letter' has several lines of writing, in the middle, that are slanted at an angle (toward the right) and the spacing of the letters is tighter or neater compared to the 'unknown letter', which has a wider variety of slanting letters and words. It just looks more discombobulated.
If we assume the handwriting is from the same person, if the letters are many years apart, that could explain differences, or maybe one was written while under the influence of some chemical intoxicant.

Miles, the angles could represent dates that the different pieces were buried, but I very much doubt it. My inclination is to suspect that the person who drew the symbol was just using it as a signature. If it has significance as "ages of Adam", then it could mean the ages of Adam, Seth, and Abel, but I don't know anything about that representation, actually, and I am inclined to doubt that the person who signed the page did either. I am more inclined to think that he simply meant to convey that the three pieces together comprised the whole of "the star", and probably nothing deeper than that. I think you may be reading too deep; however if the circle had been drawn perfectly, and the angles as well, and a Zodiac calendar was being implied, the lines show the places where the corresponding sign natures occur. That is to say:
Air: Libra, Aquarius, Gemini Water: Cancer, Scorpio, Pisces Earth: Capricorn, Taurus, Virgo Fire: Aires, Leo, Saggitarius

I've been considering all that has been posted in this thread so far. I keep getting stuck, thinking of the symbol at the bottom of the note. There are many Zodiac Calendar images on Google.
